Happy Cinco de Mayo! Did you do anything to celebrate?
We were at the baseball fields most of the day for a double header but my husband managed to squeeze in a few Coronas at the end of the day and I made a virgin margarita and a non-alcolholic juice drink.
One of our favorite snacks is chips and fresh salsa but I thought we'd throw in an avocado dip. I've been making this healthy yogurt avocado dip from Cooking Light that isn't too bad. I try to find low carb, protein filled snacks. I realize this isn't for everyone but I thought I'd throw this out there for anyone interested. Our daughter will eat this but our son won't even try it.
While my husband drank beer with friends, I enjoyed a summer pineapple cooler (non-alcoholic) on our front porch.
It's a combination of limeade, pineapple juice, club soda and fresh fruit.
With Jacob at a sleepover and Walt having a guys night out, I had the evening to myself so I spoiled myself rotten with these cookie dough brownies. What better way to celebrate passing my 3 hour glucose test?? I've been craving cookie dough which is not recommended during pregnancy and I found a recipe without eggs! (Recipe from Baking with Blondie)
I cheated by using a brownie mix but below is the cookie dough recipe.
3/4 cup butter, at room temperature
3/4 cup light brown sugar, packed
1 cup powdered sugar
3 Tablespoons whole milk
1 1/2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 1/2 cups mini chocolate chips
I mixed all the ingredients except the chocolate chips. They were the last thing I added. Once the brownies cooled, I layered the cookie dough mix on top of the brownies. Refrigerate until the cookie dough is firm.
