Now, I haven't had many pumpkin cookies so in my limited tasting – these are the best! They are melt in your mouth delicious!!
I discovered these on Pinterest (surprise, surprise) but the recipe is orginally found on Better Homes and Garden. I whipped these up over the weekend while the kids were napping!
The BHG recipe yields 60 cookies. I cut the recipe in half because I have no business having 60 cookies in my house right now!
Ingredients:
- 1 cups butter, softened
- 1 cups granulated sugar
- 1 teaspoons baking powder
- 1 teaspoons baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 eggs
- 1 teaspoons vanilla
- 1 cup pumpkin
- 2 cups all-purpose flour
Cookie Icing:
- 1/4 cup butter
- 1/4 cup packed brown sugar
- 1/8 cup milk
- 1/2 teaspoon vanilla
- About 1 1/4 cups powdered sugar

Steps:
1. Preheat oven to 350 degrees F. In a large bowl, beat the butter with a mixer on medium to high speed for 30 seconds. Add sugar, baking powder, baking soda, salt, cinnamon, and nutmeg. Beat until combined, scraping bowl occasionally. Add egg and vanilla; beat until combined. Beat in pumpkin. Beat in flour using a wooden spoon as needed to stir in any remaining flour.
2. Drop dough by heaping teaspoons 2 inches apart on an ungreased cookie sheet. Bake for 10 to 12 minutes or until tops are set. Let cool (use a wire rack if available).
{You can make them round and pretty but time was of the essence since our little guy will some times only sleep 30-45 minutes.}
3. To make the icing, heat 1/2 cup butter and brown sugar until melted and smooth in a small saucepan. Transfer to a medium bowl. Stir in milk and 1 teaspoon vanilla. Beat in powdered sugar until smooth. Spread frosting on cookies. If desired, sprinkle with additional cinnamon. Makes about 30 cookies.
With the kids waking up from naps, I had diapers to change and babies to feed so Walt took over and iced the cookies. Not bad right? :)
I've filed these as a family favorite! But give them a shot and you be the judge.

Angela, I'm so glad you are taking the time to snap shots of the cutest moments–I like the capture of Jacob's greenish/purplish eye, Lily's dress up in beautiful colors and Preston's thumb in his mouth. I also like Lily up in the air with Walt as well as Preston's toes. I like the 3 of them lying down to see the size difference. GREAT CAPTURES! Keep it up!
